Healthy Pork Quiche with Sweet Potato Crust Recipe

This recipe makes two 12.5x10.5 inch quiches.
Ingredients (If you just want to make 1 quiche, please 1/2 this recipe)
Crust
1.4kg skinned sweet potatoes
4 eggs
1/2 cup flour (any type of flour but I used wheat flour)
salt
Filling
1kg pork collar cubes
500g pork belly cubes
300g wild rocket
7 yellow onions
salt and pepper
15 eggs
525ml milk
Directions
1) Skin sweet potatoes and cut them into cubes
2) Put a small amount of sweet potatoes into the food processor at a time and pulse it into small bits
3) Add the eggs, flour and salt into the sweet potato mixture and mix well
4) Oil the pans and use your hands to from the crust
5) Baked in the oven at 190c for 30mins
6) Season the pork with salt and pepper and add olive oil. Bake for 30mins or stir fry till cooked
7) Season the wild rocket with salt and add oil. Stir fry for about 2-3 mins
8) Cut onions in halves and slice it to make thin strips. Add oil and salt to the onions and stir fry for about 20 mins on low heat till they reduce in size
9) Mix 5 eggs with 175ml milk and salt. Do this three times and give 1.5 portion to each pan
10) Mix the pork, wild rocket and onions in the pan and press the filling down so that all will be immersed in the egg mixture
11) Bake at 190c for 40mins
